It may have been a month late, but today we finally had Willow's birthday party… it had a rainbow theme so I took on the challenge of a rainbow cake… I must say (despite having to lose the yellow layer due to it sticking to pan, and therefore breaking apart and not being able to support the weight of the layers above it), it turned out as the "maddest cake ever!!" (according to one party guest! lol!)

I started with two vanilla cake mixes, which I mixed up and divided into 6 bowls… I added food colouring to get the desired colours…

 

Once cooked and cooled, I stacked them up and applied a crumbing layer of white icing (to fix the crumbs to the cake and not mix with the final layer of icing)

 

I then applied the final layer of icing… cutting the cake was a challange, but the surprise rainbow was a big hit!
